Spices are the core of Indian and Mughlai cuisine. Indian spices are traditionally used in different forms: whole, chopped, ground-powdered , roasted, sautéed, fried, or as toppings. In India, the word “masalas” or ‘Masale’ means materials or ingredients used as spices in cookery. Additionally, ‘Masale’ are spice and herb blends that are the foundation of Indian dishes and create their unique flavors. Masale can be used as powdered dry mixtures or used as a paste. These ingredients include cardamom (small-green and large-black elaichi), corriander, cumin, dried ginger (sonth), turmeric, chilli, white and black pepper, cinnamon, fennel, fenugreek (seeds and leaves), cloves, nutmeg mace, saffron, aniseed, carom seed/ bishop’s weed(ajwain), etc.

One of the pioneers in spice commodity world is Noori Masale, which started its journey in the year 1928 in the old city of Delhi when Mr. Sadiq Ali and his son Mr. Noor Ahmed founded Noori Masale. Initially, high quality spices were ground using hand driven Muller and blended. These were sold in a retail outlet locally. The outlet still exists and is home to quality spices and spice blends.
Later,Mr. Noor’s son Mohd. Azam strived to enhance the quality of these masale by going through specific processing of spices in order to maintain the highest quality standards. All our products conform to quality standards such as FSSAI, ISO etc.
Currently Mr. Akif Azam, the fourth-generation scion has taken forward the traditional masala to newer heights. After a thorough research, Mr. Akif came out with a queer yet pleasing blend of old spice combinations keeping in mind the contemporary food trends. Thus, accommodating the latest market demands through innovation.
Noori Masale includes fresh whole ground-powdered Indian spices, and spices that are traditionally “dry-fried” before grinding, which greatly enhances flavor.
